Cranberry Orange Loaf

Our Women's Ministries group from church is having a bake sale tomorrow morning, so I am baking today. I'm making Cranberry Orange loaves and I thought I would share the recipe with you. It's just a beautiful, yummy loaf that you will want to cut thick slabs of and smear it with butter and wash it all down with a nice cup of tea. Enjoy!

1/4 cup butter or margarine
1 cup granulated sugar
1 egg
3/4 cup orange juice
2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups frozen or fresh cranberries
1/2 cup chopped pecans or walnuts (optional)

place all ingredients in a large bowl and stir until well mixed. Scrape into a 9x5x3 loaf pan and bake at 350 degrees for 1 hr. test with a toothpick. let stand 10 min. remove from pan. cool on cake rack. wrap. tastes even better the next day.
